Craig Jones, an owner of the trademark Angelo’s Tavern, and Gabriel Aragon, reputed DTC chef, have partnered to open a dual-sided restaurant venue in Littleton this year. The venue is split between a second Angelo’s Taverna and an urban ‘microwinery’ called Carboy Winery. Located at 6885 S. Santa Fe Drive, it’s part of the larger 24-acre development that also includes Breckenridge Brewery’s new Farm House restaurant.
The restaurant and winery will be housed in a new 10,000 square-foot facility that’s being built from the ground up. Jones and Aragon plan to use 2 acres of the 4.5-acre site for their joint venture to create a developable pad site just west of the project. The project also proposed to bring in a new access road off Santa Fe just south of Brewery Lane.
Carboy has been of particular interest to the local public, which has enthusiastically embraced the microbrewery culture. The urban winery will import grape juices from foreign and domestic vineyards in large 275lb. bladders, before then blending and fermenting juices to make their own wines.
The project has been a development challenge for the two restaurateurs; they rezoned the property from residential to commercial in seven months. CORE assisted Jones and Aragon with the Site Development Plan entitlement process with the City of Littleton, as well as with other local agencies such as Denver Water and CDOT, and was able to get City approval in under 4 months. CORE also provided engineering design and surveying for the project.
